Carrot Pickle :

Indian meal is almost incomplete without pickles on the side. Anything homemade always tastes better. It is one of the easiest pickle to make. This pickle nicely goes with Curd rice and Sambar rice. Lets see with step by step pictures...
Spicy Carrot Pickle

Ingredients :


  1. Carrot                          - 1 cup (cut into thin slices)
  2. Red chilly                    - 5 to 6
  3. Fenugreek seeds           - 1/4 tsp
  4. Asafoetida                   - 1/4 tsp
  5. Red Chilly powder       - 3 tsp
  6. Turmeric Powder          - 1/4 tsp
  7. Mustard Seeds             -1 tsp
  8. Vinegar or Lemon Juice- 4 to 5 tsp
  9. Few Curry leaves
  10. Salt to taste

Method:
Take all the Ingredients

Heat oil in a pan , add mustard seeds, red chilly , curry leaves, fenugreek seeds and asofoetida 

Add carrot mix well for 2min

Add Vinegar and stir it for 30sec

Add Red chilly powder and salt, stir t for 30 sec

Remove from the flame 

Carrot pickle is ready to serve
