Kuska Biryani - Plain Biryani recipe :

Kuska biryani or plain biryani cooked in onions, tomato base without using any vegetables or meat... Kuska biryani is more of flavorful rice with lots of spices, mint leaves and coriander leaves...Let's see step by step pictures...


Ingredients :

  1. Big onions - 2 chopped
  2. Tomato - 3 chopped
  3. Ginger - garlic paste - 1 tbsp
  4. Mint leaves - 1/2 cup
  5. Coriander leaves - 1/2 cup
  6. Green chilies - 5 - 7 
  7. Biryani masala powder - 1 tbsp
  8. Turmeric powder - a pinch (optional)
  9. Oil - 2 tbsp
  10. Ghee - 1 bsp
  11. Bay leaf - 2 - 3 
  12. Cinnamon stick - 2 small pc
  13. Star anise - 1
  14. Cloves - 5
  15. Ellakai /Green cardamon - 2 
  16. Salt to taste
  17. Basmathi Rice or Jeeraka samba rice or normal rice - 1 and 1/2 cup

Rice Measurement :

  1. Normal Rice - 1 cup                                                                                                                 Soak the rice for 15 - 20 min add 1 1/2 cup f water for 1 cup of Rice
     2. Seeraga Samba Rice - 1 cup
         Soak the rice for 5 min , add 1 3/4 cup of water for 1 cup of rice
   
     3. Basmati Rice - 1 cup
         Soak the rice for 15 min, add 1.5 cups of water for 1 cup of rice.

Method :

  1. Wash and Soak the rice in water for 20 - 30 mins.
  2. Peel and chop the onion, tomato, green chilies and keep aside.
  3. Clean and chop the coriander leaves and mint leaves and keep aside.
  4. Heat oil and ghee in heavy bottom kadai, add the bay leaf, cinnamon, cardamon,cloves and star anise. Saute it for a min.
  5. Add onion, ginger garlic paste and saute until onion becomes soft.
  6. Now add the tomatoes and green chilies, mix well cover and cook the tomatoes gets smashed.
  7. Once tomato gets smashed add the chopped, mint and coriander leaves, saute it for 2 mins.
  8. Then add the biryani masala powder, turmeric powder and mix it well.
  9. Now add the 2 cups of water for 1 and 1/2 cup rice. Add required salt.
  10. Once its boil add the soaked rice and mix it well.
  11. Cover with lid.
  12. It took 15 - 20 mins.
  13. Once water absorb, put the flame in simmer and cover the kadai with the cotton cloth and cover the lid.
  14. Cook the biryani in low flame for 10 - 15 mins
  15. And turn off the flame.
  16. Then live it for 10 mins.
  17. Serve kuska biryani with onion raita.
  18. This biryani taste better after couple of hours, so you can make it rarly morning if planning for lunch.
